To A Tea: Sassafras Tea Room a perfect fit for Cheryl Domi

Using All Her Talents: Running restaurant brings out the best in owner

Cheryl Domi almost became a home economics teacher. She actually began her college education at Ball State University taking education courses, before switching to interior design.

Domi, who has spent much of her adult life as an independent businesswoman, realized teaching would not be for her.

“I didn’t like getting in front of a group,” she said. “Now, I do it all the time.”

Her parents ran businesses when Domi was a child. She remembers during the merchandise at her family’s furniture store, answering the phones at their funeral home and helping customers at her grandparents’ dime store in southern Indiana. After college, she started her own window coverings business on the northside of Indianapolis, Windows Interiors By Cheryl, which she owned and operated for 12 years.

She then worked with a friend, Karin Glass, for a few years, helping her start three tearooms, Serenity in Zionsville, Serendipity in Carmel and Signature in downtown Indianapolis. Her friend had also planned to open the Sassafras Tea Room in Greenwood.

“I was still working for Karin and she was trying to set it up down her. I bought it from her,” Domi said. “It just kind of fell in my lap. I worked for her for four years, then I took this over.”

Although a seamstress by trade, Domi felt confident she had learned what she needed to know about running a tea room.

All her talents are put to use in the restaurant, she said.

“I had worked in restaurants before. The draperies business was interior design. I also use that here to create a festive, yet homey feel. This is pretty much everything I’ve had and done over the years all put together,” she said.

The Sassafras Tea Room opened January 2010 in Old Town Greenwood.

The business is in a late-1800s Georgian home that was once the home of Dr. Sheek, the town doctor. Unlike many historic homes repurposed into businesses, this home was intentionally left looking like a house.

The hardwood floors are covered with Oriental rugs and an eclectic, yet harmonious arrangement of old-fashioned tables and chairs and place settings. No two tables are identical, which was intended, Domi said.

She gets the tables and place settings from “all over,” including family and friends and thrift shops. The effect is like being at a get-together in a family home, where the dishes, tablecloths and chairs don’t necessarily match.

“It’s like being in Grandma’s house,” Domi said.

The signature offering is the afternoon tea, which is offered Monday through Saturday, 2:30 to 4 p.m.

British tradition

Afternoon tea is a British tradition said to have been introduced by Anna, the seventh Duchess of Bedford, in 1840. Dinner in upper-class society was served fashionably late, so when people become hungry in the afternoon, they had a long time to wait to eat. Anna would ask for a tray of tea and bread and butter to be brought to her room around 4 in the afternoon. She began inviting friends to join her for the afternoon snack. Soon it became a fashionable event, with ladies dressing up in gowns, gloves and hats for light refreshments and conversation in the drawing rooms of upper-class homes. The British still have tea and a snack in the late afternoon, although much of the ceremony and ritual is gone, with Brits more likely to have a quick mug of tea and a biscuit at 4 pm.m., according to HistoricUK.com.

The more formal version of the tradition crossed the ocean, however, and afternoon tea is offered in upscale hotels and restaurants across the country, including the former L.S. Ayres Tea Room in Indianapolis.

Sassafras Tea Room’s deluxe tea package is called “The Duchess Tea.” It includes three varieties of teas, four types of finger sandwiches (chicken salad, cucumber, etc.), and a tower of sweet treats, such as brownies, eclairs, scones, cream puffs, lemon bars, etc.

A “petite” version of the tea, “The Princess Tea,” is also available. For little girls, it includes a craft and makes an ideal children’s bnirthday party, Domi said.

Domi said many of her customers who come for afternoon tea are in a party. It’s often a setting for wedding showers, baby showers, birthday parties, anniversary parties. Organized groups, such as members of the local Red Hat Society, residents from area senior citizen homes or a church women’s group, also enjoying coming for tea. For celbrations, Sassafras can make personalized, decorated cakes.

“We try to make it a special environment and for the whole experience to be unique and memorable for them,” Domi said. “We cover the whole gamut. We’ve done everything but a divorce party.”

Sassafras has a lunch men, as well. Sandwiches, salads and soups are offered, including the iconic Chicken Velvet Soup from the L.S. Ayres Tea Room. Lunch ius served before tea time and includes more substantial fare.

All the food and treats are homemade. Domi can make gluten-free foods, as well, and is willing to tweak recipes to accommodate a customer’s allergies.

Many people learn about her restaturant on the Internet and it becomes a destination for some, bringing people from all over the state. Domi said she’s had customers hail from as far away as Austyralia. They were staying in a hotel in Indianapolis and decided to make the trip south for afternoon tea.

And tea is not just for the ladies. Domi said they get men in there, either as part of a family group or on their own for lunch.

We’re not a typical tea room. A lot of times, men don’t want to go to a tea room, but even the men don’t leave here hungry,” she said.

After opening, Domi expanded the restaturant to the upstairs of the home, raising hte capacity to approximately 50.

She recently added offsite catering, offering her signature foods and teas at events, such as wedding receptions or small office parties. She has also fofered dinner for special occasion groups at the restuatruatn, but is not open to the punblic for dinner.

The holiday season is especially busy, with so many groups looking for a fun and unique activity. She is offering “Tea with Mrs. Claus” this year on Dec. 13-14.

Her downtime, she said is in January and February.

“Come winter, I’ve got to think outside the box a little,” she said.

The restaurant also offers a variety of retail items, including sampler packages of teas that are served there and acrts and crafts from local artisans. The walls are decorated with works from Southside Art League members and are for sale, as well.

As she grows and expands her offerings, Domi is experiencing a problem, although it’s a good one to have, she said. She has outgrown her kitchen; she especially needs a bigger and better refirgerator.

Plans to expand

So Domi plans to expand the kitchen into the neighboring room, originally the home’s dining room. Right now, the room has guest tables, but people don’t like to sit so close to the kitchen anyway, she said. Most prefer the home’s front room with its cozy fireplace and view of Madison Avenue.

Domi said it would be difficult for her to work for someone else at this point in her life, although running her own business does have its negatives, most of which she knew to expect, such as dealing with a no-show employee or the thigh cost of new equipment.

“Expect that you’re going to work long hours,” she said. “It’d be nice to have a consistent paycheck, too. But I’ve been on my own for so long, so I am loving this.”

The world is so fast-paced. Cheryl Domi aims to slow it down a little for her customers at Sassafras Tea Room by creating an atmosphere where people can come in, the world is out — and they can relax, have fun and make new memories.

 

“The goals wer to grow, to create a unique environment, a special place for them to come to feel like they’ve been somewhere without going out of town,” Domi says.

 

While Domi says she never planned on opening a restauratn, it is a “Godsend.” With a background in interior design, and after 12 years of running a windown draping business from her home, Domi decided to help a friend open some resturants. She ended up purchasing the location at 299 N. Madison Ave., Greenwood, from her friend. Her family stepping in to help, including her daughter Rachel, son Alex, step-son, parents and boyfriend. She currently has six employees in the family-run business. Sassafras Tea room is entering its fifth year in operation.

 

“Personally, I feel like this has made me a better person — with the people contact,” Domi says. “We have the regulars coming back and that’s what makes it worthwhile; the friends that I’ve made along the road.”

 

Sassafras Tea Room serves specialty teas and home-style sourthern cooking durin glunch hour and for special events in the evenings. Still utilizing her interios design skills, Domi decorated the entire home-like restaturant herself, including the upstairs.

 

I’m always picking up different dishes and teacups,” Domi says. “We have great ustomers that just show up at my doorstep with stuff, so I have dishes that belong to my customers and their relatives. I don’t like everything matchy-matchy. We do have fancy china we use on special events. I like it all to be different.”

 

Domi says everyone is welcome, and everyone seems to enjoy themselves, from young to old. She says the children have been a growing focus, as she’s seen little girls and boys coming in wearing their finest clothing to enjoy some tea out of the china cups. She says one little girl, age 5, has had three birthday parties at Sassafras Tea ROom, even though her parents have given her other options. To offer a different experience, Domi ssays she can teach the children how to properly behave while eating. She says they are thingking about beginning craft parties for them.

 

“We are reaching a younger audience,” Domi says. “They’re enjoing it and coming, asking mom and grandma to bring them. Especially when you get the kids, they to comine in and learn proper place settings. They come in their little dress-up clothes. They feel special. They want to come back. I think everyone in life wants to feel special.”

 

Last year, Sassafras Tea Room began catering weddings. Domi says they have done a lot of baby and bridal showers, and says she hopes to do more of those types of special events as the business contiues to grow, largely through word of mouth. She also offers special events of her own, through the holidays, including a Mother’s Day tea or tea with Mrs. Claus for Christmas.

 

“It’s neat because each day is different,” Domi says. “You can’t predict it. You have to be very flexible. I like that challenge. I couldn’t do a job where I sit still and everything is the same all the time. I’m a creative person. That’s paperwork is challenging for me.”

 

Domi says she is proud of the fact that they opened at a tough time in the economy and dug-in to their Greenwood location. Business has grown more and more each year, and she says she hopes to see that continue. With plans to consistently make the business better, by expanding the kitchen or catering more events, Domi says it’s still all about creating a nice atmosphere where every persona feels special when they leave.

 

“We’ve just going to keep doing what we’re doing; make the customer happy and wanting to come back,” Domi says.

Four-year-old Sierra Contreras knew exactly where she wanted to spend her birthday last weekend — sipping tea from china cups with her friends at Sassafras Tea Room in downtown Greenwood.

Even though her mom, Damaris Contreras, gave her three options for her party, Sierra selected Sassafras, where she had held her birthday party the year before.

Whether for birthday parties, baby showers or simply lunch, ladies of all ages can be seen ascending the steps of the two-story, yellow Georgian house at 229 N. Madison Ave.

Some come dressed in their Sunday best, including fancy hats and formal white gloves, fully prepared to enjoy a meal or afternoon tea. Members of the Red Hat Society — a women’s group known for wearing bright red and purple — often meet there for lunch.

The century-old structure — built as a physician’s resident in the early 1900s — is filled with tables covered in lace doilies, whimsical salt-and-pepper shakers, and formal cups and saucers. Hot tea is served from a variety of ornate pots, some of which have been donated by previous guests.

“The other day, a lady brought me a 12-piece place setting that she wanted to see put to good use. She’s coming in soon and bringing her great aunt, so we’ll be able to serve them on their own china,” said the tea room’s proprietor, Cheryl Lutz Domi.

The first-time business owner loves to watch guests enjoying themselves at her establishment, which opened in January 2010.

“I enjoy entertaining and being a part of people’s lives and special times,” she said. “What we try to do is emphasize family traditions and memories, getting different generations together to have quality time a nice setting, rather than sitting down for fast food.”

Donna Nix, Greenwood, meets friends there for lunch once or twice a week. “I love the food, and I love the atmosphere,” she said.

In addition to regulars, Lutz Domi sees customers from as far as Columbus, Mooresville and Louisville.

A former interior designer, she entered the hospitality business by accident. When a friend asked for her helping opening a couple of restaurants on Indianapolis’ Northside, Lutz Domi happily agreed. AS her friend was preparing to open the tea room in Greenwood, her plans changed, and she asked Lutz Domi whether she’d like to buy the place.

She agreed and has never looked back.

“It’s a lot of work, but there are a lot of rewards,” said Lutz Domi, whose parents and two grown kids can often be found working alongside her at the restaurant.

Many customers say Sassafras reminds them of the former L.S. Ayres tea room in Downtown Indianapolis, but Lutz Domi wouldn’t know. She grew up near Evansville, and never visited the famous tea spot.

Even so, she loves seeing people bring in their grandkids to relive those fond memories, sipping tea and snacking on cookies and scones.

Many little girls like to play dress-up when they visit, wearing a touch of makeup and their fanciest dresses, often toting along a doll or two. Lutz Domi caters to the doll guests, often hosting American Girl parties and even selling doll clothing in the tea room’s tiny gift shop.

The tea room is a popular spot for wedding rehearsals, business meetings and other events, the owner said. A Mother’s Day brunch and holiday tea with Mrs. Claus also are favorites.

Guest can order off the menu at lunchtime, or enjoy a selection of teas and desserts for afternoon tea. Lutz Domi has created all the recipes herself and occasionally updates the limited menu. Quich is the most popular item, followed by chicken salad and chicken velvet soup, a classic made using the L.S. Ayres tea room recipe.

Afternoon tea consists of three types of finger sandwiches, scones and a variety of sweets, along with two to three types of hot tea.

“Its’ just like a traditional English tea party. We use linen napkins and fancy tea pots to make it extra special, and we really encourage guests to relax and enjoy some good conversation,” she said.
